Notice? or Note?  Which should I use ?

Well, both words can be used as a noun or a verb.

As a noun, "note" can refer to a few different things:
An annotation or amendment to an existing thing (usually a document of some sort).
A written item/document in its own right, usually with implications of brevity and informality.
A written message, again with implications of brevity - e.g. "I sent him a note".
Note can also refer specifically to a musical note.
"Notice" as a noun generally means:
A piece of signage or other brief broadcast type item intended to communicate a message to anyone observing it. Implications of formality.
Can also refer to the existence of attention/awareness - e.g. "it has come to my notice", "this item is beneath notice", etc.

As a verb, "note" usually means to observe and/or record something - in written/document form in the case of recording. "I noted the precarious state of his hat", "I noted down the details". 

"Notice" is used in the same way, though only for observing/becoming aware. "I noticed his hat was falling off". "Note" as a verb signifying awareness is probably slightly more formal than "notice", particularly in dialogue, though both are widely used.
